Receta de croquetas de pollo y jamón fácil

Tapas de croquetas de pollo

Cortar el jamón en dados pequeños. Picar el filete de pollo lo más pequeño posible. Pelar la cebolla y cortarla en dados finos. Rehogar brevemente en mantequilla caliente y clarificada, luego añadir el jamón y el pollo en la sartén y cocinar durante unos 3 minutos. Espolvorear con harina y remover. Desglasar con la leche y remover hasta que se forme una mezcla firme. Si es necesario, añadir un poco de leche. A continuación, retirar del fuego y sazonar bien con sal, pimienta y nuez moscada. Cortar la mantequilla en trozos pequeños, mezclarla, dejarla enfriar y dejarla cuajar, tapada, durante al menos 2 horas en el frigorífico.

Batir los huevos en un bol y espolvorear el pan rallado en un plato. Formar la mezcla de carne, con las manos mojadas, en bolas ovaladas.  Pasarlas por los huevos y cubrirlas con el pan rallado. Calentar el aceite en una sartén y freír las croquetas por todos los lados hasta que se doren. Servir calientes o frías, según se desee.
